Want to learn how to roll out pasta dough and make a fantastic homemade pasta dish? This is the workshop for you!
The Mercato Coperto's pasta makers, wielding rolling pins and wisdom, will teach you how to make the authentic Romagna cappelletti. In Romagna, cappelletti are a dish steeped in symbolism of well-being, wealth, and opulence. In the past, wishing "cappelletti on the table and throughout the year" was indeed one of the most heartfelt and welcome wishes.
The experience will be accompanied by a GUIDED TOUR OF THE COVERED MARKET led by the staff, to discover the history, architecture, furnishings, and food and wine culture of the place.

Participants will be provided with a kit containing all the tools of the trade (cutting board, rolling pin, pasta wheel), Molino Spadoni Gran Mugnaio flour, local eggs, water, and everything needed to roll out the dough. The dough will be prepared in advance and provided to participants by the pasta maker, who will explain and demonstrate the preparation process step by step at her station.
The pasta makers will also teach all participants how to prepare the filling with traditional ingredients and will reveal all their secrets and the technique used to close the cappelletti "Romagna-style." At the end of the workshop, participants can take home their freshly prepared pasta.
